The key to a good smoothie is its texture: it needs to be super creamy - more full-bodied than normal juice but more fluid than ice cream. It can be made with water, milk, yogurt or ice cream, but it always takes fresh fruits or vegetables. The tip to achieve perfect creaminess is to freeze all ingredients (when not using our packs, you can choose your favorite fruit, slice and take it to the freezer), including yogurt or water. The result is a refreshing drink capable of soothing the most obstinate summer heat.
And speaking of a refreshing drink, there are few that top this smoothie. Combining the creamy, refreshing coconut with the sourness of yogurt is already a great idea - just check our Coconut Lassi recipe! But adding Pineapple and Mint to it takes it to a whole other level of deliciousness.
Ingredients
For 2x 400ml smoothie:
2x Tropix Coconut
2x Tropix Pineapple
1/2 cup water
5 mint leaves, plus extra to garnish
50g natural yogurt, frozen ahead
Preparation
Run the pulp packs under warm water for a few seconds. This helps soften the pulp just enough so that it’s a little easier to slip out of its packaging. Combine pulps, yogurt and mint in a blender and beat well, adding water slowly until you get the desired consistency. Add some extra mint leaves for decoration to the side of the glass and enjoy!
